Bacon Mayonnaise
(Goes great with steamed artichokes or in a crab salad)
- 1 cup soy oil
- 2 egg yolks
- 2 Tablespoons lemon juice
- 2 Tablespoons sherry vinegar
- ½ teaspoon cayenne pepper
- Season with pepper and Bacon Salt
Whisk the lemon juice, vinegar and egg yolks together very well. Slowly add the oil while whisking rapidly. You are looking for the acid and the oil to emulsify and thicken, so go slow. Once thickened, season well with Bacon Salt.

Having visited a pig farm, I can see why pork is considered to be “unclean” by some religious groups. The smell alone on a pig farm is enough to make you throw up.
I’m for anything that tastes like bacon but doesn’t contain bacon. Bacon tastes and smells so tantalizing, but, as the Bible says, “There is a way that seemeth right unto man, but the way thereof is of death and destruction. Sorry, bacon lovers…haha
